Yummy pumpkin seed salad


Pumpkin Seed Salad:
-2 heads (or bags) of butter lettuce
-1 8 oz. bag of pumpkin seeds
-1 pear sliced
-1 teaspoon of cinnamon and sugar
-1 head of fennel

Dressing:
-½ cup olive oil
-1 tablespoon of agave
-1 tablespoon apple cider vinegar
-¼ teaspoon of sea salt and pepper

Cut lettuce and fennel and mix together in a bowl. On low heat simmer the pumpkin seeds, cinnamon and sugar for about 10 minutes or until a smidge crispy. Let the seeds cool and then mix into the salad. Wisk all of the wet ingredients for the dressing together, and toss with the salad mixture and serve!
